Usability testing "in the wild"

For an upcoming project, I'll be conducting usability testing on a kiosk-type device.

I have done plenty of usability-testing in a controlled lab (or client) environment, but have never tested in a public place where subjects have not signed up to be tested.

Any tips from the crew out there?
